Grapes are harvested at lowest temperature possible. 16 carefully selected rows of Shiraz used for this specific wine. Skins and juice fermented in open top fermentation tanks for 14 days. Punch down every 6 hours ensured a slow and cool fermentation. Wine is then separated from the skins and placed in 100% new French Oak barrels for 36 months.
